He's starred in a string of top Sydney kitchens - think Mr Wong, Ms G's, Queen Chow, Totti's, Lotus - and today hosts exclusive dinners as a private chef, using ingredients like lobster, caviar and truffle in dishes that capture Australian produce at its seasonal peak.
