From Northern Italy to Sydney's lower North Shore, chef Pavoni is a man obsessed with water. His iconic seafood-only restaurant, Mosman's Ormeggio at the Spit (which was awarded one chef-hat in its opening year, and has achieved two hats ever since) sits gently on the water and boasts magnificent views of Middle Harbour. His latest venture, a'Mare, means 'by the sea' in Italian and is perched at Barangaroo with bay views that stretch across to Balmain. The Lombardian-born Alessandro has authored a cookbook on the recipes and regional fare of the lakes of Northern Italy. It's the life aquatic for Pavoni; he's a man dedicated to bringing the very best in ethical pescatarian dining.
