Our golden ticket to Henry Deane's NYE Soiree has an all-inclusive food and beverage package from 7pm-12:30am with flowing beverages including cocktails, champagne, wine & beers.

The modern Australian menu curated by Cian Mulholland will send your tastebuds into a frenzy with roving canapes throughout the evening, an oyster station and bumps of caviar.

• Raw tuna, parmentier vinegar, salted kombu, perilla

• Scallop ceviche, ponzu, chilli oil, radish

• Abalone hash, abalone sauce, vinegar powder

• Spiced carrot skewers, fermented relish, mint, coconut

• Charred spiced honey and lime chicken thigh skewers

• Seared kangaroo salad, smoked beef fat, mushroom, sorrel
