Fred's Story
Since I have become a chef, I have travelled to a lot of countries. But the country that I have been to the most is Mexico. I loved Mexico so much that I had my own Mexican Cantina for over thirty years at Glastonbury Festival and other venues in both the UK and Australia.
My main attraction wherever I go is always the food. My first visit to any country I go to is the markets. To me, the markets tell you so much about the place you are visiting. As a chef, I have wandered around countless Mexican markets. Observing, smelling and talking to traders and chefs about their dishes and ingredients. And of course, eating. Lots of tasting and savouring dishes from all over Mexico. Noticing the regional varieties and seasonal changes.
I will be sharing authentic Mexican dishes with you in our Mexican Class. Dishes, as you will have them in the country of origin. Dishes as I have been making them over the years for thousands of my festival customers.
