Alone Jung Eun Chae and Luke Burgess are phenomenal. Leading some of Australia's most influential dining experiences: meals guided by Korean and Japanese cuisine respectively, each detail perfected.
Now - exclusively for Tasting Australia - these sought-after talents will unite.
Melbourne fine diners Lûmé and Cutler & Co were Chae's starting point, with stints there following her training at the William Angliss Institute. Chae then launched a homestyle degustation for six guests that rose to the top of diners' to-do lists.
Today thousands are on a waitlist for the eponymous restaurant Chae runs from her home in Cockatoo, east of Melbourne. Those who secure seats discover Korean cuisine at its nourishing best: seasonal dishes made entirely from scratch, centred on traditional ferments. It's unlike anything else in Australia.
Burgess, meanwhile, embraces Japanese food culture. Best known as the chef-owner of Hobart's two-star Garagistes, and more recently launched the intimate Seven and a Half. Also in Hobart, it offers leisurely Sunday lunches seating just 10 guests.
